A little more special kind of tea cookie that could be elevated to awesome dessert with a scoop of ice cream. (Plain is good too) Ingredients:
crust |
1 cup of brown sugar firmly packed |
1/2 cup of butter |
2 egg yolks, beaten |
dash of salt |
1 1/2 cup of flour |
2 teaspoons of baking powder |
1/2 teaspoon of vanilla |
topping |
2 egg whites |
1 cup of brown sugar |
1/2 teaspoon of vanilla |
dash salt |
1 cup of chopped pecans |
Directions:
1. Crust: 2. Cream sugar and butter, add egg yolks, salt and sifted dry ingredients. Blend in vanilla. 3. Pat in bottom of a 9 x 9 inch pan. 4. Topping: 5. Beat egg whites until stiff; add brown sugar gradually. 6. Stir in vanilla, salt and nuts. Spread over first mixture in pan. 7. Bake at 350 degrees for about 25-28 minutes. 8. Cool and cut into squares. 9. Serve plain or with ice cream. |
