Cajun style Ingredients:
3 cups water, iced |
1 teaspoon sugar |
1 teaspoon salt |
1 lb small shrimp (peeled) |
2 teaspoons cajun seasoning |
3/4 cup flour |
2 tablespoons cornstarch |
1 teaspoon powdered sugar |
1/2 cup beer |
vegetable oil |
Directions:
1. Mix 3 cups ice water, sugar and salt in a bowl. 2. Add the shrimp and set aside 15 minutes, then drain well and pat dry. In another bowl, toss the shrimp with 1/2 teaspoon Cajun seasoning. 3. Mix the flour, cornstarch, powdered sugar, the remaining Cajun seasoning and the beer in a bowl to make a smooth batter. 4. Add the shrimp and stir until evenly coated. 5. Heat oil to 350 degrees. 6. Working in batches, fry shrimp until golden, about 3 minutes. 7. Remove and drain on paper towels; season with salt. |
