I was able to get this yummy recipe from my mother-in-law, Norma. The first time I tasted this I new I had to have the recipe. Last Christmas my son called me and I walked him through the steps. It is a must for Thanksgiving and Christmas. Read more . At Christmas time I like to add a few cranberries to it. Ingredients:
2 cups crushed pineapple with juice |
juice from 1 lemon |
1 cup sugar |
1 cup grated cheddar cheese |
1/2 pint whipped cream or cool whip |
1 1/2 package unflavored gelatin |
maraschino cherries |
Directions:
1. Heat pineapple with sugar and lemon juice and stir until sugar dissolves. 2. Meanwhile soak 1 1/2 pkg of gelatin in 1/2 cold water. 3. Remove pineapple mixture from heat and add gelatin mixture. 4. Put this mixture in a bowl to chill in refrigerator until just before the gel stage. 5. Add grated cheese and fold in whipped cream. 6. Set a few cherries out on a paper towel to soak up liquid, then place cherries around the top as you would like. 7. Chill until gelled completely. |
