Yukon Gold and Mushroom Gratin |

Delicious, buttery, creamy comfort food. great paired with meat and green veggies. (NOTE**The original recipe used heavy whipping cream but I wanted to cut down the fat. It is a bit soupy and might benefit from a flour roux). Ingredients:
3 tablespoons butter |
6 ounces mushrooms |
1 lb yukon gold potato |
salt |
pepper |
10 ounces fat-free evaporated milk, carnation is a good one |
Directions:
1. Preheat oven to 375. 2. Melt butter in medium skillet over medium-high heat. 3. Add mushrooms and saute until brown and soft, about 6 minutes. 4. Generously butter square baking dish. 5. Cut potatoes into 1/8th inch slices (I do not peel them). 6. Arrange 1/3 of potatoes in the bottom of the baking dish. 7. Spoon 1/3 of mushrooms on top of the potatoes. 8. Sprinkle with salt and pepper. 9. Repeat with 2 more layers of potatoes, mushrooms and salt and pepper. 10. Pour evaporated milk over layered dish. 11. Cover with foil and bake 45 minutes. 12. Remove foil and bake another 20 minutes. 13. Let stand 10 minutes before serving. |
