From NY Times, original recipe appeared in 1958 issue of Sunset Magazine for this unique tasty holiday cookie Ingredients:
1/2 lb unsalted butter |
1 1/2 cups sugar |
pinch salt |
1 egg yolk |
2 1/2 cups flour |
1 cup seedless blackberry jam |
1/2 cup egg whites |
1 tsp lemon extract |
3/4 cup grated ( very fine chopped ) walnuts |
1 cup coarser chopped walnuts |
Directions:
1. Cream butter with 1/2 cup sugar and salt with electric mixer. 2. Mix in egg yolk and flour to combine 3. Dough will be crumbly 4. Press into a 11 1/2 by 16 1/2 inch baking pan with floured hands. 5. Spread jam evenly over dough 6. Mix whites to soft peaks. 7. Gradually add remaining sugar and lemon extract and beat mixture to stiff peaks. 8. Fold in grated walnuts 9. Spread mixture over the the jam 10. Sprinkle with chopped walnuts 11. Bake in a 350F preheated oven until meringue is hardened, about 35 to 40 minutes. 12. Cut cookies in pan while warm , 8 rows by 11 rows. 13. Lightly press broken meringue back into jam layer. 14. Cool completely 15. Makes about 7 dozen |
