I know there are tons of ceviche recipes here, but this one is slighly different than any I found. Posting here for safekeeping...and b/c it's DELISH!
Ingredients:
3/4 lb shrimp, peeled & deveined
3/4 lb lobster
3/4 lb orange roughy
3/4 lb bay scallop
3/4 lb halibut
3 garlic cloves, minced
3 red bell peppers, chopped
1/4 cup cilantro, chopped
3 habanero peppers, diced
3 red onions, diced
12 lemons, juiced
12 limes, juiced
Directions:
1. prepare all ingredients in a stainless mixing bowl.
2. cover with the lemon & lime juice and marinade overnight or up to 24 hours.
3. Serve in a large margarita or martini glass with avocado slices & cilantro sprigs for garnish.
4. Can be eaten with tortilla chips or in individual margarita or martini glasses as a first course.
