This is a wonderfully fresh and cool salad for a hot day. Ingredients:
variety of lettuce and spinach to serve 8 hombres |
1 1/2 cups jicama, cut into thin strips |
1 medium red onion, thinly sliced |
1 grapefruit, peeled and white membrane removed |
2 oranges, peeled and white membrane removed |
1 large avocado, peeled, pitted and sliced just before serving |
dressing |
2 tbsp. cider vinegar |
2 tbsp. fresh lime juice |
1/3 cup olive oil |
1 garlic clove, smashed |
1 tsp. salt |
1 tsp. cumin |
1/8 tsp. crushed red chili pepper flakes |
Directions:
1. In a large salad bowl, mix greens and jicama. Arrange onion rings on top. Cut grapefruit and oranges into sections and arrange over onions. Cover and refrigerate for at least 2 hours. 2. Mix the dressing ingredients until well-blended. 3. Just before serving prepare the avocado and add to salad. Add dressing and toss gently. |
