This is a wonderfully fresh and cool salad for a hot day.
Ingredients:
variety of lettuce and spinach to serve 8 hombres
1 1/2 cups jicama, cut into thin strips
1 medium red onion, thinly sliced
1 grapefruit, peeled and white membrane removed
2 oranges, peeled and white membrane removed
1 large avocado, peeled, pitted and sliced just before serving
dressing
2 tbsp. cider vinegar
2 tbsp. fresh lime juice
1/3 cup olive oil
1 garlic clove, smashed
1 tsp. salt
1 tsp. cumin
1/8 tsp. crushed red chili pepper flakes
Directions:
1. In a large salad bowl, mix greens and jicama. Arrange onion rings on top. Cut grapefruit and oranges into sections and arrange over onions. Cover and refrigerate for at least 2 hours.
2. Mix the dressing ingredients until well-blended.
3. Just before serving prepare the avocado and add to salad. Add dressing and toss gently.
