Pronounced YOO-kuh, this starchy root vegetable, also known as cassava, tastes similar to red potatoes. Check the produce section for yuca, which looks like a large sweet potato with a thick, brown skin, or order it online . Mojo (pronounced mo-ho) is a sort of vinaigrette flavored with garlic and lime or orange juice. Ingredients:
2 pounds yuca, peeled, halved, and cut into 3- to 4-inch pieces |
3 teaspoons salt, divided |
6 garlic cloves, pressed |
1 large sweet onion, finely chopped |
1/2 cup extra virgin olive oil |
1/3 cup fresh lime juice |
sliced onion rings (optional) |
Directions:
1. Bring yuca with water to cover and 2 teaspoons salt to a boil in a large Dutch oven over medium-high heat. Cover, reduce heat to medium-low, and simmer 25 minutes or until tender. Drain well. Transfer yuca to a large bowl or serving platter, and keep warm. 2. Stir together remaining 1 teaspoon salt, garlic, and next 3 ingredients in saucepan over medium heat; cook, stirring occasionally, 8 to 10 minutes or until onion is translucent. Spoon garlic mixture evenly over yuca; top with onion rings, if desired, and serve immediately. 3. *1 (24-ounce) package frozen yuca, thawed, may be substituted for fresh. |
