THIS CAKE IS GREAT FOR BREAKFAST, COFFEE CAKE OR A SNACK. IT TASTE LIKE ONE BIG, SWEET HONEY BUN! MY AUNT ALMA PASSED THIS RECIPE DOWN TO ME A FEW YEARS AGO, IT WAS ONE OF HER FAVORITES. ENJOY! Ingredients:
non stick spray |
1 box yellow cake mix |
1 cup sour cream |
3/4 cup vegetable oil |
4 large eggs |
filling |
1/3 cup honey |
1/3 cup packed light brown sugar |
1 tablespoon cinnamon |
1/2 cup finely chopped pecans |
sugar glaze |
2 cups confectioner's sugar (sifted) |
1/3 cup milk |
1 teaspoon pure vanilla extract |
Directions:
1. PREHEAT OVEN TO 350 DEGREES 2. SPRAY 13X9 INCH PAN WITH NON STICK SPRAY 3. PLACE THE CAKE MIX, SOUR CREAM, OIL, AND EGGS IN A LARGE MIXING BOWL. BLEND WITH AN ELECTRIC MIXER FOR 1 MINUTE ON LOW SPEED. 4. SCRAP THE SIDES OF THE BOWL WITH RUBBER SPATULA, INCREASE THE SPEED OF MIXER TO MEDIUM AND BEAT 2 MORE MINUTES. 5. THE BATTER SHOULD LOOK THICK AND WELL BLENDED. 6. POUR THE BATTER INTO PAN. 7. DRIZZLE THE HONEY 8. THEN THE BROWN SUGAR 9. THEN THE CINNAMON 10. AND LAST THE PECANS 11. WITH A DINNER KNIFE, SWIRL THROUGH THESE INGREDIENTS TO BLEND THEM SLIGHTLY 12. PLACE IN OVEN 13. BAKE THE CAKE UNTIL IT IS GOLDEN BROWN AND SPRINGS BACK WHEN YOU LIGHTLY PRESS WITH YOUR FINGER FOR 35 MINUTES. 14. FOR THE GLAZE PLACE THE CONFECTIONER'S SUGAR, MILK AND VANILLA IN MIXING BOWL AND STIR UNTIL COMBINED. 15. POUR THE GLAZE OVER THE TOP OF THE HOT CAKE, SPREADING WITH A SPOON, MAKE SURE SOME OF THE GLAZE GETS DOWN INTO THE SIDES OF THE CAKE. SOMETIMES I MAKE EXTRA GLAZE, SINCE WE LIKE EXTRA GLAZE.. |
