4 small plum tomatoes |
2 cucumbers, peeled |
3 scallions |
1/2 cup parsley (flat leaf variety) |
1/4 cup fresh mint leaves (optional) |
1/4 cup chopped fresh dill |
3 -4 tablespoons olive oil |
1 lemon, juice of |
salt |
pepper |
Directions:
1. Finely chop the vegetables. 2. Lightly mix with the remaining ingredients. 3. Serve at room temperature. |
