Yogurt is the secret ingredient that makes this muffin moist and tender. Adapted from the American Diabetes Association. quick-cooking or old-fashioned rolled oats, plain low-fat yogurt, low-calorie margarine, dark brown sugar, banana or apple juice concentrate, egg substitute or eggs, all-purpose flour, salt, baking powder, baking soda, nonstick cooking spray cvt Ingredients:
1 cup quick-cooking oats (or old-fashioned) |
8 oz dannon plain natural yogurt |
1/4 cup promise margarine |
2 tablespoons dark brown sugar |
1 banana, mashed (or 1/4 cup apple juice concentrate) |
2 eggs (or 1/2 cup egg substitute) |
1 cup all-purpose flour |
1/8 tsp salt |
1 tsp davis baking powder |
1/2 tsp baking soda |
1/2 cup raisins |
Directions:
1. Mix the yogurt with the oatmeal and let stand for 1 hour. 2. Cream the margarine with sugar and banana or apple juice. 3. Add egg and oatmeal mixture. 4. Sift the dry ingredients into the oatmeal mixture. Stir in raisins. 5. Spoon into 12 muffin cups coated with nonstick cooking spray. 6. Bake at 375 degrees F for 20-25 minutes. |
