I love to add cooked bacon & blue cheese to this cornbread. It turns into a magical feast. Add anything to it - this cornbread is great & moist. I love the addition of yogurt. Ingredients:
1 c cornmeal |
1 c ap flour |
2 t sugar or maple syrup |
1/2 t salt |
1/2 t baking soda |
zest of 1 orange |
2 eggs |
1/4 c buttermilk |
1/4 c yogurt |
1/4 c corn oil |
Directions:
1. Oven 425*, grease a springform pan. 2. Mix flour, sugar, soda, salt, zest. 3. Combine eggs, buttermilk & yogurt. 4. Add dry ingredients & pour oil over the batter. Stir in - do not over mix 5. Bake for 20-25 minutes |
