Very nutritious and nice to put in kids lunch boxes. Also good for adults to eat. Easy to make. When Bananas get too soft I mash em up and freeze them until I have enough to bake with. Ingredients:
1 cup brown sugar |
1/2 cup butter |
2 eggs, lightly beaten |
1 tablespoon lemon juice |
3 bananas, mashed |
1/2 cup yogurt (plain) |
2 cups whole wheat flour |
1 tablespoon baking powder |
1/2 teaspoon salt |
1/2 cup chopped nuts |
1 tablespoon lemon zest |
Directions:
1. Cream butter & sugar. 2. Add eggs. 3. Stir in Lemon juice, banana, & yogurt. 4. Add sifted flour, baking powder & salt. 5. Fold in nuts and lemon zest. 6. Bake in loaf tin at 350 for 50-60 minute. |
