Serve with warmed whole wheat naan.
Ingredients:
16 oz. sliced beets
1 cup fat free yogurt, drained in cheesecloth
2 tbsp granulated sugar
1 tbsp fresh mint
Directions:
1. Cut the beets into 3/4 dice.
2. Immediately before serving, mix the yogurt and sugar with the beets. Transfer to a serving bowl and garnish with the mint.
