Yo Yo Biscuits With Lemon Icing Filling |

These little biscuits are heavenly. Soft, light and crumbly and requiring very few ingredients - I can almost guarantee that you have everything you need to make them in your pantry right now! These ones have lemon icing but try them with strawberry flavour too just like the photo. Read more ... Ingredients:
200g (7 oz) unsalted butter, softened |
2 teaspoons vanilla extract |
1/2 cup icing sugar |
2 cups all purpose flour, sifted |

1 cup icing sugar |
20g (3/4 oz) unsalted butter, softened |
2 tbspn lemon juice (substitute with other flavouring as desired) |
Directions:
1. Preheat oven to 180 C (355 F) 2. Place butter, sugar and vanilla in bowl of electric mixer and beat for 8 - 10 minutes or until creamy and pale. 3. Add flour and beat until smooth dough forms. 4. Roll teaspoons of mixture into balls, place on prepared baking tray and press with a fork. 5. Bake for 8 - 10 minutes, cool on wire racks. 6. ICING 7. Mix all ingredients until smooth, Spread mixture on the base of half the biscuits and sandwich together with the remaining halves. 8. Enjoy! |
