Yia Yia's Weekend Tzatziki Dip

Source: One Big Table by Molly O'Neill. You may sub 2 cups plain whole milk yogurt, drained for 8 to 24 hours if you cannot find greek strained yogurt. I like this with crusty greek fried potato wedges.
Ingredients:
1 cup greek style strained yogurt
1 medium cucumber, peeled, seeded and, chopped
1 tablespoon extra virgin olive oil
1 tablespoon distilled white vinegar
1 tablespoon minced fresh dill
1 teaspoon minced fresh mint
1 garlic clove, minced
kosher salt, to taste
Directions:
1. In a small bowl, stir together all ingredients and season to taste with salt. Cover and refrigerate for 30 minutes, until flavors have blended.
