Yellow Wax Bean And Radish Salad With Cannellinis |

For a crunchy summery salad,mix wax beans,radish slivers,red onion slices,cannnellini beans and fresh basil in a simple vinaigrette. Ingredients:
2c dried cannellini beans(12 oz),soaked overnight and drained |
1 small yellow onion,peeled and halved |
1 small carrot |
1 small celery rib |
1lb. yellow wax beans |
1/2c extra virgin olive oil |
1/4c red wine vinegar |
1tbs. fresh squeezed lemon juice |
salt and pepper |
8 radishes,sliced 1/4 thick |
1small red onion,thinly sliced |
1/3c small basil leaves or chopped basil |
Directions:
1. In a large saucepan,cover the drained cannellini beans with 2 water. Add the yellow onion,carrot and celery and bring to a boil. simmer over low heat,stirring occaasionally till the cannellinis are tender,about 1 hour and 15 mins. Drain the cannellinis and discard the onion,carrot and celery 2. Meanwhile,bring a large saucepan of salted water to a boil. Fill a large bowl with ice water. Add the wax beans to the saucepan and cook till just tender,3 mins. Drain the beans and chill quickly in the ice water. Drain and pat dry. 3. In a small bowl,combine olive oil with the vinegar and lemon juice and season with salt and pepper. 4. In a large bowl,toss the cannellini beans with the vinegar and lemon juice and season with salt and pepper. 5. In a large bowl,toss the cannellinieans with the wax beans,radishes,red onion and basil. Add the vinaigrette and toss to coat. Season with salt and pepper and serv right away. 6. To save time, substitute canned cannellinis for the dried ones. |
