If you like yellow squash this is the recipe for you. It is so good and goes well with poultry, pork and fish dishes. I serve it often. It is very good. Enjoy Ingredients:
2 pounds yellow squash |
2 eggs, beaten |
3/4 stick butter |
1/2 cup milk |
2 tablespoons brown sugar |
1 teaspoon salt |
2-1/2 cups pieces of bread torn small |
1 cup grated cheddar cheese |
1/2 medium onion finely chopped |
Directions:
1. Cook the squash in boiling salted water until tender. 2. Drain well and mash. 3. Mix together squash, eggs, butter, milk, onion, brown sugar and salt. 4. In a buttered casserole put a layer of torn bread, layer of squash mixture and a layer of cheese. 5. Repeat and top with bread and dots of butter. 6. Bake uncovered for 45 minutes at 350 degrees. |
