YELLOW SQUASH MARINARA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stolley Estate in Wills Point, Texas in 1982. Ingredients:
3 medium yellow squash sliced |
1 medium white onion chopped |
1 red bell pepper chopped |
3/4 pound fresh mushrooms sliced |
1/2 teaspoon parsley |
1/2 teaspoon garlic |
1/2 teaspoon basil |
1/2 teaspoon oregano |
6 ounces shredded pepper jack cheese |
6 ounces shredded white cheddar cheese |
30 ounces marinara sauce |
Directions:
1. Preheat oven to 375 then steam vegetables with parsley, basil, oregano and garlic for 3 minutes. 2. Pour a little sauce in bottom of casserole then add layers of vegetables, cheese and sauce. 3. End with sauce then cover and bake 45 minutes and bake uncovered 10 minutes. 4. Cool slightly then serve immediately. |
