Yellow Squash Delight Casserole |

Very delicious! Ingredients:
2 lbs yellow squash, sliced |
2 onions, chopped |
1 cup mayonnaise |
3 eggs, beaten |
12 saltine crackers, crushed |
1 teaspoon salt |
1 (1 ounce) package ranch dressing mix |
1 cup breadcrumbs, mix with |
1/4 cup melted butter |
1 cup cheese, shredded |
Directions:
1. Cook squash and onions until tender; drain. Add all other ingredients except breadcrumbs, butter, and cheese. 2. Pour into a 8x8x2-inch baking dish coated with cooking spray. 3. Top with mixture of breadcrumbs, butter, and cheese. 4. Bake at 325 degrees for 30 to 40 minutes. |
