Yellow Squash Cinnamon donut Bites |

I found a recipe for yellow squash puffs on zaar and found a way to adapt it so my kids and husband would eat the squash puffs. (of course they didn't know it was yellow squash at first!!) They came out great. Ingredients:
1 cup mashed yellow squash, well drained |
1 egg, well beaten |
1/3 cup flour |
1/3 cup cornmeal |
1 teaspoon baking powder |
1/2 teaspoon salt |
1/2 teaspoon fresh ground pepper |
1 tablespoon sugar |
1/4 teaspoon cinnamon |
Directions:
1. Mix the squash and egg and add the pepper, cinnamon and sugar to this. 2. Combine flour, corn meal, baking powderand salt, mixing well. 3. Add the egg mixture to this. 4. Drop by small teaspoonfuls in hot oil, turning once. (They won't take long at all.) 5. Drain on paper towels. I sometimes sprinkle them with powdered sugar, but they don't really need it. |
