Yellow Split Pea Soup With Ham |

This is adapted from my 365 One Dish Meals cookbook. I bet it could be adapted for the crock-pot. Ingredients:
1 lb dried yellow split peas |
1 lb baked ham, diced |
8 cups water |
2 onions, finely chopped |
1 teaspoon marjoram |
1/2 teaspoon thyme |
1 1/2 cups carrots, chopped |
3 celery ribs, chopped |
1/4 cup parsley, minced |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. In a large soup pot, combine dry peas, ham and water. Heat to boiling over high heat and skim off any residue that rises to the surface. 2. Add chopped onions, marjoram and thyme. Heat to boiling over high heat. 3. Reduce heat to low. Simmer, covered for 1 hour. 4. Add carrots, celery, parsley, salt and pepper. Cook, covered, over medium-low heat, until peas are tender, about 30 minutes. 5. Discard ham bone if there is one. Serve hot. |
