3 tablespoons vegetable oil |
1 tablespoon achiote seeds |
1/2 medium onion, minced |
1 garlic clove, minced |
2 cups long grain white rice |
3 1/2 cups chicken broth |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 cup peas |
Directions:
1. In a medium saucepan, heat oil over medium heat. Add achiote seeds and cook until seeds are sizzling and oil is a rich gold color. 2. Remove from heat. With a spoon, scoop up and discard seeds, leaving oil in pan. 3. Return pan to medium heat. Add onion and garlic and cook until softened, 2 minutes. 4. Add rice and cook, stirring, 1 minute or until grains look opaque. 5. Stir in chicken broth, salt and pepper. Bring to a boil, turn heat to low, cover pan and cook 18 mintues or until liquid is absorbed. 6. Cover and let rice stand 5 minutes. Gently stir in peas. |
