Simple and tasty. I use this recipe to create perfect yellow rice during the week day rush. Ingredients:
1 onion, minced |
3 garlic cloves, minced |
1/2 green pepper, minced |
1 cup rice |
2 cups canned chicken broth |
1 (1/4 ounce) package sazon con azafran seasoning, from a 1 . 41 ounce box (purchase in the spanish or mexican section of your local supermarket) |
4 ounces tomato sauce |
2 -3 tablespoons oil |
1 whole chicken breast, cubed (breast can be cut in half and left whole if that is your preference. ) |
1 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Sauté onion, garlic, and green pepper in oil until soft. Add salt and pepper and tomato sauce. Cook an additional 3-5 minutes. Add chicken and sauté until no longer pink. Add rice and broth. Bring to a boil, stir, cover and lower heat to simmer. Cook 25-30 minutes on top of the stove or put in a 325-350 degree pre-heated oven. I prefer to bake the rice in the oven. Top with a small can of drained peas, if desired. |
