Yellow Lentil & Root Vegetable Stew |

Awesome on a cold gray November day... :) Ingredients:
1/2 cup chopped onion |
2 tablespoons olive oil |
2 tablespoons tarragon leaves |
1 tablespoon coriander powder |
1 dash cayenne pepper (optional) |
4 cups vegetable broth |
1 cup yellow lentils |
3 parsnips, peeled & chopped |
4 carrots, peeled & chopped |
salt, to taste |
Directions:
1. Cook the onion in oil until translucent. 2. Add the spices, root vegetables, lentils & broth and cook over medium heat about 30 minutes or until the ingredients are softened. 3. Tastes even better with a dollop of sour cream or a small pat of goat cheese. |
