When your garden overflows with yellow tomatoes make this. It is delicious and refreshing! Top with a drizzle of Creme Fraiche and some chopped avocado. Serve with crusty french bread. Yum! Ingredients:
3-4 lbs peeled, seeded, and chopped yellow tomatoes |
1 english cucumber, seeded and chopped |
1 yellow bell pepper, chopped |
1 green bell pepper, chopped |
1/2 red onion, chopped |
1-2 cloves garlic, minced |
1 jalapeno |
2 tbsp rice wine vinegar (red wine vinegar is okay but don't use as much) |
2-3 oz chicken stock or white wine (if it is too thick add more) |
1 tbsp soy sauce |
2 tbsp basil, minced |
2 tbsp cilantro |
2 tbsp extra virgin olive oil |
salt and pepper |
creme fraiche |
avocado |
Directions:
1. Place the vegetables in a blender or food processor and process until chunky. 2. While the blender/food processor is still running, add the rice vinegar, the olive oil, soy sauce, basil, cilantro,and the wine. 3. Season to taste with salt and pepper 4. Chill for a couple hours to let the flavors marry. 5. Serve in chilled bowls 6. Garnish with a dollop of Creme Fraiche and chopped avocado. |
