1 1/4 cups yellow cornmeal |
3/4 cup all-purpose flour |
1 tablespoon sugar |
2 1/2 teaspoons baking powder |
1 teaspoon salt |
1 egg, lightly beaten |
2 tablespoons butter, melted |
1 1/2 cups buttermilk |
Directions:
1. Heat a well-greased 10-inch ovenproof skillet at 450° for 5 minutes. 2. Combine first 5 ingredients in a large bowl. Stir together egg and next 2 ingredients; add to dry ingredients, stirring just until moistened. Pour batter into hot skillet. 3. Bake at 450° for 20 minutes or until golden. |
