Guaranteed to cure what ails you! This chicken soup is very flavorful and even has just a touch of spice to it. I pureed the vegetables for my children's sake, and it still turned out deliciious. From Best of the Best from Calling All Cooks Cookbook. Ingredients:
2 -3 lbs chicken |
3 1/2 quarts water |
2 medium onions, chopped |
4 sticks celery, chopped |
1 bay leaf |
4 chicken bouillon cubes |
3 tablespoons butter |
1/2 cup rice (raw) |
1 teaspoon red pepper |
2 tablespoons turmeric |
2 tablespoons chopped parsley |
salt and pepper |
Directions:
1. Boil chicken in water until tender and remove from bone. Add chicken back to water and cook 45 minutes. Add onions, celery, bay leaf, bouillon cubes, butter, rice and seasonings. Cook 45 minutes on low heat. Soup will be thick; add additional water for thinner soup. |
