This is a simple and easy way to enjoy homemade yeast rolls without taking all day to prepare and cook.
Ingredients:
1 cup shortening ( i use 1/2 cup shortening and 1/2 cup butter)
***if you plan to refrigerate these, they are softer with all shortening
1 cup sugar
2 well beaten eggs
1 cup warm water (to let the yeast set in)
1 cup boiling water
1 1/2 tsp. salt
2 pkg. dry yeast
6 cups sifted flour (i like to use bread flour...just a preference)
Directions:
1. In a large mixing bowl place shortening and/or butter, sugar and salt.
2. Pour 1 cup boiling water over the mixture and blend.
3. Let set for a few min. (You still want the mixture to be a little warm)
4. Place the pkgs of yeast into the warm water and set aside.
5. Add eggs and blend.
6. Add yeast mixture to the bowl and blend.
7. Add flour a cup at a time and mix well.
8. ***At this point you can cover and place the rolls into the refrigerator for four hours. Take them out 3 hours before cooking.***(I don't refrigerate)
9. Place dough in a warm place to rise for one hour.
10. Punch down dough.
11. On a floured surface knead dough gently.
12. Form into large balls and place in baking pan.
13. Let rise for another hour.
14. Bake at 425.
