We are littel bit obsessed with yogurt; we even cook it! Yogurt soup(Yayla Soup) is a popular comfort dish both in Turkey and Central Asia.It's also a very common sick soup; even inhaling the strong smell of mint and red pepper makes you feel better. Read more . My people and my mom loves this soup.. Ingredients:
1/4 cup rice |
5 cups of water (if you wish you can use half chicken stock, half water) |
2 cups of plain yogurt |
1 egg yolk |
1 tbsp flour |
2 tbsp butter |
2 tsp dried mint or fresh mint thinley sliced |
1 tsp salt |
1 tbs red pepper |
Directions:
1. -Boil rice in 5 cups of water with salt until (very) soft. 2. -In a bowl, beat the egg yolk and flour well, and then add yogurt and mix. With 1-2 tbsp water lighten up this mixture. 3. -add to yogurt mix in a boiled water and rice and start cooking on medium heat and stir with wood spoon until soup is boil.It's important that, otherwise yogurt would curdle. Cook soup after boiled like 3 minutes. 4. -Heat butter in a pan. Once it sizzles, add mint flakes and red pepper stir for 20-30 seconds (don't let it burn). Then, pour it into soup. |
