Yankee pot Roast from a Yankee, what more can I say. I'm not the Yankee, but the recipe came from a Yankee!! lol Ingredients:
2 1/2 lbs beef chuck roast |
3 medium baking potatoes, unpeeled, and cut into quartered (about 1 lb) |
2 large carrots, cut into 3/4 - inch slices |
2 celery ribs, cut into 3/4 - inch slices |
1 medium onion, sliced |
2 bay leaves |
1 teaspoon dried rosemary leaves |
1/2 teaspoon dried thyme leaves |
1/2 cup reduced-sodium beef broth |
Directions:
1. Trim excess fat from meat and discard. 2. Cut into serving pieces; sprinkle with salt and pepper. 3. Combine vegetables, bay leaves, rosemary, and thyme in the crockery pot. 4. Place beef over vegetables in Crockery Pot. 5. Pour broth over beef. 6. Cover and cook on low 8 1/2 to 9 hours or until beef is fork-tender. 7. Remove beef to serving platter. 8. Arrange vegetables around beef. 9. Remove and discard bay leaves. |
