Yams With Roasted Chilies |

I've had guest with a dislike of yams go back for second's! Ingredients:
3-4 red yams peeled, and cut into chunks |
1 1/2 teaspoons ground cinnamon |
1/4 cup maple syrup |
2 tablespoons butter |
fresh roasted green (hot) chilies or canned, chopped |
Directions:
1. In a heavy saucepan place yams and cover with water and add the cinnamon 2. Bring to a boil, then reduce to a simmer and cook until soft. 3. Drain the water and add the Maple syrup and butter. 4. Mash with a potato masher or put in a food processor and process. 5. Stir in chopped green chilies 6. Place in an oven proof baking dish and heat, 350 degrees, until hot. 7. Optional:Garnish before serving with chopped parsley of cilantro |
