Yams And Hubbard Squash Delight |

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Woodson Estate in Bedford, Texas in 1990. Ingredients:
1 white onion chopped |
2 tablespoons oil |
1 pound hubbard squash pared and cut into 1” pieces |
2 yams pared and cut into 1 pieces |
1 cup coconut milk |
1/2 teaspoon salt |
1/2 teaspoon ground cinnamon |
1/4 teaspoon ground cloves |
Directions:
1. Cook and stir onion in oil in skillet over medium heat until tender. 2. Stir in remaining ingredients and heat to boiling then reduce heat and cover. 3. Simmer 10 minutes then simmer uncovered stirring occasionally for 5 minutes. |
