4 tablespoons butter |
4 tablespoons flour |
1 cup whole milk |
15 ounce can cut yams in syrup pureed |
6 eggs separated |
1/8 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
1/2 teaspoon lemon juice freshly squeezed |
Directions:
1. Melt butter in large saucepan over medium heat. 2. Add flour and cook stirring constantly 2 minutes. 3. Slowly add milk whisking to avoid lumps then stir in 1 cup yam puree and bring mixture to boil. 4. Slightly beat egg yolks then add yolks to yam mixture and bring to boil a second time. 5. Transfer soufflé base to mixing bowl and season with salt and pepper then set aside to cool. 6. Preheat oven to 400. 7. Beat eggs whites in large bowl of mixer with lemon juice until soft but not stiff peaks form. 8. Carefully fold egg whites into cooled flavor base. 9. Pour mixture into center of buttered and floured soufflé mold. 10. Place in oven and immediately reduce heat to 350 and bake 15 minutes. |
