YAM SLICES BAKED WITH GARLIC AND ROSEMARY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Viler Estate in Georgetown, Texas in 1991. Ingredients:
4-1/2 pounds yams sliced |
1/2 cup olive oil |
1-1/8 tablespoon rosemary crumbled |
20 cloves garlic flattened |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Preheat oven to 450. 2. Divide first 4 ingredients among two large baking dishes then stir to coat yams. 3. Season with salt and pepper then bake for 50 minutes stirring occasionally. 4. Discard garlic before serving. |
