Yam and Apple Salad (Creole) |

The original of this recipe was found on , but it's been tweaked a bit. Ingredients:
4 cups yams, peeled, grated |
2 granny smith apples, peeled, cored, chopped |
1 fuji apple, peeled, cored, chopped |
1 cup dried cranberries |
3/4 cup pecans, chopped, toasted |
1 large orange, juice of |
1 large lime, juice of |
2 tablespoons white wine vinegar |
1 tablespoon honey dijon mustard |
2 garlic cloves, minced |
1 dash salt, to taste |
1 dash pepper, to taste |
1/3 cup olive oil |
Directions:
1. In a large bowl, mix yams, apples, cranberries & pecans. 2. In a small bowl, whisk together orange juice, lime juice, vinegar, mistard, garlic, salt & pepper, until well blended, then add oil in a thin stream, whisking constantly. 3. Pour over the salad & toss well to combine before covering & refrigerate overnight to allow flavors to meld & yams to soften. |
