1 lb chicken breast (boneless, skinless) |
2 bunches scallions, trimmed |
1/4 cup sake or 1/4 cup dry white wine |
1/4 cup soy sauce |
1 tablespoon sugar |
1 teaspoon grated fresh ginger |
Directions:
1. Prepare hot fire. Cut chicken into 1 1/2 inch cubes. 2. Cut scallions into 2 inch lengths, with some green tops. 3. Thread 3 or 4 pieces of chicken onto 12 skewers, alternating with pieces of scallion. 4. In a small bowl, mix together remaining ingredients. 5. Place skewers on an oiled grill and brush with soy mixture, turning occasionally, until chicken is white through, 5-7 minutes. |
