Xochipilli's Mezcal Smash |

One of the official cocktails of Summer, 2012. Think of it as an adult sno-cone. This is from a local Mexican restaurant. Ingredients:
2 (1 inch) pineapple chunks |
1 1/2 tablespoons cinnamon simple syrup (make syrup then infuse with cinnamon) |
1/4 cup mezcal |
cinnamon stick (garnish) |
Directions:
1. With a muddler or the handle of a wooden spoon, mash pineapple and cinnamon simple syrup in a 16 oz mixing glass or cocktail shaker 4-5 times just to release juices and oils. Add mezcal. Strain into an Old Fashioned glass and fill halfway with crushed ice. Stir, then mound more crushed ice on top. |
