Wyoming Grilled Sweet Potatoes |

These are so good. I can never get enough of these when I make them. I will be making them Sunday for Easter dinner. We love them and hope you do to. Ingredients:
2 pounds sweet potatoes peeled and cut into 1/2 inch slices |
1 cup water |
1/3 cup dijon or honey mustard |
2 tablespoons olive oil |
1 tablespoon fresh rosemary leaves |
Directions:
1. Place sweet potatoes and water into large microwavable dish then cover and microwave on high for 6 minutes. 2. Drain well. 3. Combine mustard, oil and rosemary. 4. Grill sweet potato slices on oiled rack over medium heat for 8 minutes turning and basting often with mustard mixture. |
