2 large potatoes, cut into thin strips |
2 large egg whites |
3/4 tablespoon ground cumin |
1/2 teaspoon table salt |
1/2 teaspoon chili powder |
1/4 teaspoon black pepper |
1 lb lean ground turkey |
1/2 medium red onion, chopped |
1 large egg, beaten |
2 tablespoons parsley, chopped |
1 garlic clove, minced |
1/2 teaspoon ground tarragon |
1/2 teaspoon table salt |
1/2 teaspoon black pepper |
4 medium hard rolls, high-fiber, 2 oz each |
Directions:
1. Preheat oven to 450. Coat a nonstick baking sheet and broiler rack with cooking spray. 2. In a large bowl, combine potatoes, egg whites, cumin, salt, chili powder, and pepper; toss to coat. Transfer to baking sheet. 3. Bake until potatoes are barely tender, about 15 minutes. 4. Meanwhile, in a large bowl lightly combine turkey, onion, egg, parsley, garlic, tarragon, salt and pepper. Form into 4 burgers. 5. Increase oven temperature to broil. Broil fries until crispy, about 10 minutes. At the same time, broil burgers till brown, about 5 minutes per side. 6. Place on rolls and serve immediately. |
