These tasty pasta wedges are perfect for packed lunches - or serve them as a light meal with salad. 2 pts per wedge.From weight watchers. Ingredients:
3 1/2 ounces dry pasta |
low-fat cooking spray (10 sprays) |
1 medium onion |
1 medium red pepper |
1 medium zucchini |
4 eggs |
3 1/2 ounces low-fat soft cheese |
2 teaspoons dried oregano |
1 pinch salt |
1/8 teaspoon pepper |
Directions:
1. Cook the pasta shapes in boiling, salted water for 10 - 12 minutes, until just tender. 2. Meanwhile, spray a non-stick frying pan with low fat cooking spray and add the onion, pepper and zucchini. Cook for 4-5 minutes, stirring often. Remove from the heat. 3. Drain the pasta and add to the vegetables. 4. Beat the eggs and soft cheese together. Stir in the dried herbs and season with salt and pepper. Add the vegetables and pasta. 5. Spray a 9 inch round baking dish with low fat cooking spray. Add the pasta mixture. 6. Bake in the oven for 25 minutes, until set and golden brown. Serve warm or cold, sliced into wedges. |
