The dry rub on this salmon keeps the inside moist and tender. Store the leftover spice rub in an airtight container ? you can use it on chicken and steaks, too. Ingredients:
1 sprays cooking spray |
1 tablespoon chili powder |
1 tablespoon ground cumin |
1 tablespoon paprika |
1 teaspoon ground oregano |
1 teaspoon sugar |
24 ounces salmon, atlantic fillet(s), cut into four 6 oz pieces (or 1-1/2 pound) |
1 teaspoon olive oil |
1 bunch spinach, steamed |
Directions:
1. Combine chili powder, cumin, paprika, oregano and sugar. Rub salmon with spices & marinate in fridge for 1-4hrs. 2. Coat grill with cooking spray. Preheat grill. 3. Drizzle salmon with oil. 4. Grill salmon over medium heat, about 5 to 6 minutes per side. Serve with spinach. |
