It's hard to imagine a healthier main course than this herb-fragrant roasted turkey breast. And think of what great sandwiches you'll have the next day. Ingredients:
1 tbsp olive oil |
2 tbsp parsley, fresh, chopped leaves |
2 tbsp oregano, fresh, chopped leaves |
2 tbsp rosemary, fresh, chopped leaves |
1 tbsp grated lemon zest |
1 tsp chopped mint leaves |
1 tsp salt, preferably kosher salt |
1/2 tsp freshly ground black pepper |
3 lb. turkey, breast |
Directions:
1. Position the rack in the center of the oven, and preheat the oven to 375°F. 2. Mix olive oil, parsley, oregano, rosemary, lemon zest, mint, salt and pepper in a small bowl; set aside. 3. Massage the spice mixture all over the turkey breast. Place the breast skin on a rack in a roasting pan. 4. Roast until browned and a meat thermometer inserted into the thickest part of the meat registers 170°F (both our preference and the USDA recommendation for turkey breast), about 1 hour and 30 minutes, basting every 15 minutes with the pan juices after the first 45 minutes but taking care not to dislodge the herbs. Transfer to a cutting or carving board and let rest for 10 minutes before carving. |
