This simple dinner is only 6 points if folllowing the WW flex plan and uses ingredients that I almost always have on hand for a quick supper. Recipe source: I think this recipe was given out at a WW meeting Ingredients:
1 1/2 cups soy crumbles (the sausage type) |
1 cup mushroom, sliced |
1 onion, chopped |
1 (18 1/2 ounce) can fat free vegetable soup (progresso makes a 0 point vegetable soup) |
3/4 cup bow tie pasta |
2 cups spinach |
1/2 cup reduced-fat mozzarella cheese, shredded |
Directions:
1. In a skillet over medium high heat, cook the soy protein crumbles, mushrooms and onion for 5 minutes or until vegetables are tender. 2. Stir in soup. Cover and heat to boiling. 3. Stir in pasta; reduce heat to medium low; cover and simmer for 10 minutes. 4. Stir in spinach; and cook uncovered for another 5 minutes, stirring occasionally or until spinach is hot and begins to wilt. 5. Sprinkle with cheese. |
