This classic meat loaf recipe is modified to meet WW Core guidelines. The addition of brown sugar in the sauce results in far less than 1 point per serving. The sauce could be replaced with Core cocktail sauce if desired. Ingredients:
2 eggs, beaten |
3/4 cup nonfat milk |
1/2 cup oatmeal (not instant) |
1/4 cup finely chopped onion |
2 tablespoons chopped parsley |
1 teaspoon salt |
1/2 teaspoon ground sage |
1/8 teaspoon pepper (or to taste) |
1/2 lb 93% lean ground beef |
1/2 lb ground turkey breast |
1/2 lb ground pork |
1/4 cup ketchup |
2 tablespoons brown sugar |
1 teaspoon dry mustard |
Directions:
1. Combine eggs and milk. 2. Stir in oats, onion, parsley, salt, sage and pepper. 3. Add ground meats and mix well. 4. Fold mixture into an 8x4x2-inch loaf pan. 5. Bake at 350 degrees for 1-1/4 hours. 6. Spoon off fat. 7. Combine ketchup, brown sugar and mustard. Spread ketchup mixture over meat. 8. Return to oven for 10 minutes. |
