1 lb asparagus spear, trimmed and cut into 1-inch pieces |
1/2 cup onion, finely chopped |
1 medium tomato, chopped |
1 garlic clove, minced |
2 tablespoons fresh cilantro, minced |
2 tablespoons fresh lime juice |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Place asparagus in a large pot. 2. Add water to cover. 3. Boil 5 min or until crisp-tender. 4. Rinse under cold water and drain well. 5. Process asparagus in food processor 1 min, or until smooth. 6. Place asparagus in serving bowl and stir in remaining ingredients. 7. Serve immediately or cover and chill until ready to serve. |
