From WW Magazine. Ingredients:
8 taco shells (preferably trans-fat-free) or 8 tostadas (preferably trans-fat-free) |
1 (16 ounce) can black beans, rinsed and drained |
1 medium tomato, cored and chopped |
1/2 yellow bell peppers or 1/2 orange bell peppers or 1/2 red bell pepper, cored, seeded, and chopped |
1/2 small avocado, diced |
4 scallions, finely chopped |
2 tablespoons cilantro, chopped fresh |
1 tablespoon fresh lime juice |
2 teaspoons olive oil |
1 teaspoon fajita seasoning mix (preferably salt free or low sodium) |
Directions:
1. Heat taco shells according to package directions and keep warm. 2. Combine the remaining ingredients in a medium bowl. 3. To serve, spoon 1/4 cup of mixture onto each taco. 4. 6 points per serving (2 tacos). |
