A yummy refreshing cocktail to enjoy on those hot days. I included 1 hour chilling time in the preparation time. Enjoy!
Ingredients:
1/2 cup unsweetened raspberry (fresh is best but if using frozen, defrost after measuring)
1 tablespoon black currant liqueur
1 cup dry white wine
4 ice cubes
Directions:
1. Chill two 6-ounce glasses. In a blender, process raspberries until smooth. Strain through fine sieve into small saucepan, forcing raspberries through. Discard seeds.
2. Add liqueur to saucepan and cook over medium heat. stirring frequently and skimming foam from surface when necessary, until mixture is thickened and reduced by half; 4 to 5 minutes.
3. Transfer raspberry mixture to a small bowl; cover with plastic wrap and refrigerate until chilled, about 1 hour.
4. To serve, divide raspberry mixture into chilled glasses; Add 1/2 cup wine and 2 ice cubes to each glass and stir. Serve immediately.
