WUTTISAW ..... as my Mom used to call it - is a terrific way of turning frozen leftovers into a scrumptious and healthy stew. Like my late Mom, I always save and freeze veggie parts that are not incorporated into 'today's meal' . Read more .... and use use them later to make a delicious veggie broth for a soup or stew. When cooked and pureed, these frozen tidbits thicken the stew naturally, without ANY addition of other thickeners.
Ingredients:
frozen veggies... onions, leeks, carrots, celery, tomatoes, brussels sprouts, corn niblets, anything veg that is frozen
1 quart of chicken broth
salt and pepper to taste
frozen meat of your choice.
(this can be hamburger, pork, beef, chicken, veal, lamb, whatever...)
2 - 3 raw potatoes
Directions:
1. Combine ALL ingredients into a large stewing pot over LOW flame.
2. Cook very slowly over six hours, adding raw potato early in the process.
3. Allow to simmer slowly for the six hours.
4. Taste, and add what you desire during the cooking process, allowing all to cook to softness.
5. When ready to simmer for the last hour, remove the large pieces of veggies, and puree. return to the pot.
6. This stew is cheap, HIGHLY healthy, delicious, and well worth the six hour wait!
