This is one of my favourites. Everytime I can get scallops this is what I will make. You will just want them every night. Ingredients:
1 doz scallops out of shell, fresh or frozen |
fresh thyme, approx half a cup |
streaky bacon |
olive oil |
1 medium lemon |
pepper to taste |
toothpicks |
Directions:
1. I like to cook the bacon first very briefly in a hot pan. Because you wont want the scallops to be over cooked 2. Once you have lightly browned the bacon, set aside to cool 3. Leave the remaining juice/fat in the fry pan 4. Lightly coat scallops in olive oil 5. On a plate roughly chop the tyhme and juice half a lemon over it, add pepper 6. Take scallops and roll them on plate til they are covered in the herb 7. Wrap scallops in the bacon and use toothpick to hold 8. Heat pan up and place scallops in turning them constantly 9. I cook my scallops 5 mins tops 10. Serve with lemon wedges |
